Khair Pistachio

The opening is the dessert itself: ice cream and pistachio, creamy and nutty, with hazelnut adding richness, rum a boozy warmth, cardamom a cool spice and bergamot a small citrus lift. The heart turns fruity and floral, with pear, white peach and raspberry giving a juicy sweetness and jasmine, geranium and peony adding a soft, pink floral layer. The base is pure confectionery: cotton candy, marshmallow and whipped cream over tonka bean, with cedar providing the only dry, woody counterweight.
