The opening is zesty and warm: mandarin orange and bitter orange give a candied-peel brightness, ginger a lively spice, davana a boozy, fruity note and carrot seeds an earthy, slightly powdery undertone. The heart is boozy and golden, with rum adding a sweet, spirited warmth, immortelle a honeyed, slightly curry-like note and marigold a bitter herbal edge. The base is vanilla and buckwheat, which bring a creamy sweetness and a toasted, bready, cereal-like warmth, like the cake itself.
