Sour cherry opens it, tart rather than syrupy, with saffron adding a warm, slightly medicinal spice. The heart is the interesting part: apricot and Chinese osmanthus give a soft, apricot-skin floral, while leather and a savoury olive note pull it away from dessert. The base is woods, cypriol and smoke, so the drydown is dry, earthy and genuinely smoky, like cherries near a bonfire.
