Bergamot opens with a clean, bitter citrus, and black pepper lands beside it almost immediately with a sharp, dry heat. The heart is where the gourmand vote comes from, and it is not a sweet one: liquorice brings a dark, anise-like bitterness and coffee a roasted, smoky depth, so the middle smells more like an espresso than a dessert. The base is mineral rather than conventionally woody. Stone and lava give a dry, flinty, faintly warm hardness, and woody notes carry it, leaving a finish that is dusty, dark and dry.
