A touch of bergamot lifts the opening, but the heart quickly turns to the sweet shop and the coffee bar: cacao pod and cocoa bring a dark chocolate richness, coffee adds roasted bitterness, and burnt sugar gives the caramelised, slightly smoky edge of a toasted dessert.
